Broccoli Cheddar Soup

Ingredients

  • 1/2 cup butter
  • 1 onion, chopped
  • 1 (16 oz.) package frozen chopped broccoli
  • 4 (14.5 oz.) can chicken broth
  • 1 lb. Fair Oaks Farms Cheddar cheese, cubed
  • 2 cups Fair Oaks Farms milk
  • 1 tbsp garlic powder
  • 2/3 cup cornstarch
  • 1 cup water

Instructions

  1. Using a stockpot, melt the butter over medium heat. Cook the onion in butter until softened. Stir in the chopped broccoli. Add the chicken broth. Simmer for 10 to 15 minutes, or until broccoli is tender.

  2. Reduce the heat. Stir in the Fair Oaks Farms Cheddar cheese cubes until melted. Mix in Fair Oaks Farms milk and garlic powder.

  3. In a separate bowl, stir the cornstarch in water until dissolved. Then, add mixture to soup. Stir soup frequently until it thickens.
