The Thanksgiving hangover is in full effect.  The extended family has returned home, the house is back to normal and you are getting back into your normal routine again.  The problem is, the refrigerator is still jam-packed full of Thanksgiving leftovers that you don’t know what to do with.

You are tired of reheating the same meal over and over again and you’re ready to eat something new.  How about a refreshing take on those Thanksgiving leftovers that you may not have thought of before?  Snatch up your favorite cheeses for this recipe because we are going to give you a fresh take on leftover Thanksgiving turkey that you can bring to work the following week.

This delicious take on your leftover turkey, gravy, and cranberry sauce is a great way to add a new twist to your menu without wasting all of the preparation work that you did the previous week.  Get creative with it and try different ingredients to mix it up or make it kid-friendly.

Leftover Thanksgiving Turkey Panini

Ingredients

  • 2 tbsp Dijon Mustard
  • 2 slices sourdough sandwich bread
  • 2 slices Fair Oaks Farms Swiss Cheese
  • 1/3 cup shredded leftover turkey
  • 2 tbsp leftover cranberry sauce or to liking
  • 1/3 cup leftover dressing
  • 2 tbsp leftover gravy
  • 2 tbsp butter room temp

Instructions

  1. Spread the mustard on both slices of bread, then lay a slice of Fair Oaks Farms cheese on each piece. On one slice, arrange the turkey and the cranberry sauce. On the other slice, lay on the dressing and spoon the gravy over the top.

  2. Carefully combine the two halves into one sandwich then spread the top side of the bread with 1 tablespoon of the butter.

  3. Invert the sandwich, butter-side down, onto a hot panini maker (or a grill pan or skillet over medium-low heat.). Spread the top with the remaining 1 tablespoon butter.

  4. Close the panini maker and grill until the bread is crusty and golden, the fillings are hot, and the cheese is melted.

  5. Pull the sandwich off the heat and slice it in half.  Enjoy a delicious take on leftovers from Thanksgiving that keep your mouth watering!

This sandwich is a great option for family dinner or to take with you to work.  It brings that delicious home-cooked feeling without leaving you feeling tiresome of meals you were eating with the family over the holiday.  The best part?  It’s super easy and only takes about 15 minutes to prepare.

You can also replace the Sweet Swiss cheese with more savory cheeses such as our Smoked Gouda to give this sandwich a smoky taste.  If you are looking to make it kid-friendly, remove the cranberry sauce & dressing and add some Mild Cheddar Cheese for a different take on a grilled cheese!
