Fair Oaks Farms® Master Cheesemaker Bruce Workman’s Smoked Gouda took home first place honors at the 2018 World Dairy Expo Championship Dairy Product Contest held in Madison, WI on August 21-23! Fair Oaks Farms has been the recipient of numerous awards at the World Dairy Expo Championship since first entering in 2004.

“Fair Oaks Farms is so humbled to receive such high recognition at the World Dairy Expo,” said Julie Basich, Fair Oaks Farms COO, “We are very proud of Bruce and his talents. We continue to control all aspects of the farm and truly believe that the Magic is in our Milk.” The 2018 World Dairy Expo Championship Competition saw more than 1,400 entries.

Smoked Gouda Mac and Cheese

Ingredients

  • 1/4 tsp. ground white pepper
  • 1/2 tsp. salt
  • 1 (16 oz.) package seashell pasta
  • 2 tbsp. all-purpose flour
  • 2 1/2 tbsp. butter
  • 2 1/2 cups Fair Oaks Farms milk
  • 4 oz. Fair Oaks Farms' Smoked Gouda cheese, shredded

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Lightly grease a 15x10 baking dish.

  3. Boil a large pot of lightly salted water.

  4. Add package of seashell pasta and cook for 8-10 minutes. Drain.

  5. Over medium heat, melt butter in a small saucepan. Mix all-purpose flour. Cook until a roux forms. Stir in the Fair Oaks Farms milk, salt, and ground white pepper. Stir until sauce thickens.

  6. Remove from heat. Stir in shredded Fair Oaks Farms' award-winning Smoked Gouda cheese.

  7. Combine cooked pasta and cheese sauce. Transfer to prepared dish.

  8. Bake in the oven for 15 minutes, or until heated.

  9. Serve dish to guests. Enjoy!

It is important to note that your cheese board should not be limited to, well, cheese. To bring a variety of flavors to your board, you must be creative in finding the perfect accompaniments!

Good Old-Fashioned Pancakes

Hungry for pancakes? Start your morning off right with a stack of these delicious pancakes made with your leftover milk!

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tbsp white sugar
  • 1 1/4 cups Fair Oaks Farms milk
  • 1 egg
  • 3 tbsp butter, melted

Instructions

  1. In a large bowl, sift the flour, baking powder, salt, and sugar. Make a well. Pour in Fair Oaks Farms milk, egg, and melted butter. Mix until smooth.

  2. Lightly oil a griddle or frying pan. Heat over medium-high. Pour the batter onto the griddle or frying pan. Use approx. 1/4 cup for each pancake. Brown on both sides. Serve hot with butter and maple syrup.

 

Simple Macaroni and Cheese

Honestly, who doesn't love a good bowl of macaroni and cheese? We know we do! Try this simple recipe using your leftover milk!

Ingredients

  • 1 (8 oz.) box elbow macaroni
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1/2 tsp salt
  • 2 cups Fair Oaks Farms milk
  • 2 cups Fair Oaks Farms Cheddar cheese, shredded
  • Ground black pepper to taste

Instructions

  1. Boil a large pot of lightly salted water. Cook elbow macaroni in the boiling water. Occasionally stir until cooked, but firm (approx. 8 minutes). Then drain.

  2. Over medium heat, melt butter in a saucepan. Stir in flour, salt, and pepper until smooth. Slowly pour Fair Oaks Farms milk into butter-flour mixture until bubbling. Shred Fair Oaks Farms Cheddar cheese with a grater. Add shredded cheese to the milk mixture. Stir until cheese is melted.

  3. Add macaroni into the cheese sauce. Mix until coated.

Broccoli Cheddar Soup

Ingredients

  • 1/2 cup butter
  • 1 onion, chopped
  • 1 (16 oz.) package frozen chopped broccoli
  • 4 (14.5 oz.) can chicken broth
  • 1 lb. Fair Oaks Farms Cheddar cheese, cubed
  • 2 cups Fair Oaks Farms milk
  • 1 tbsp garlic powder
  • 2/3 cup cornstarch
  • 1 cup water

Instructions

  1. Using a stockpot, melt the butter over medium heat. Cook the onion in butter until softened. Stir in the chopped broccoli. Add the chicken broth. Simmer for 10 to 15 minutes, or until broccoli is tender.

  2. Reduce the heat. Stir in the Fair Oaks Farms Cheddar cheese cubes until melted. Mix in Fair Oaks Farms milk and garlic powder.

  3. In a separate bowl, stir the cornstarch in water until dissolved. Then, add mixture to soup. Stir soup frequently until it thickens.

 

Homemade Chocolate Ice Cream

Don't worry - we didn't forget about the dessert! Do you still have extra milk? Try this easy-to-make ice cream recipe that will bring back childhood memories!

Ingredients

  • 3/4 cup sugar
  • 1 cup Fair Oaks Farms milk
  • 2 cups heavy cream
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened cocoa powder
  • 3 egg yolks, lightly beaten
  • 2 oz. semisweet chocolate chips, chopped

Instructions

  1. Whisk unsweetened cocoa powder, Fair Oaks Farms milk, salt, and sugar in a pot over medium heat until mixture simmers.
  2. Place egg yolks in small mixing bowl. Pour 1/2 cup of hot mixture in with egg yolks.
  3. Once combined, return the mixture to the pot. Heat until mixture thickens. Be sure not to boil it!
  4. Away from the heat, stir in chopped semisweet chocolate chips until melted.
  5. Pour mixture into a chilled bowl. Refrigerate for 2 hours. Be sure to stir the mixture every 30 minutes.
  6. After the chocolate mixture has cooled, mix in the heavy cream and vanilla extract. Pour the mixture into an ice cream maker and let the machine do its work!
  7. After mixing, store the chocolate ice cream in a freeze. Time varies by machine manufacturer's directions.
  8. Serve in a bowl, cone, or in between 2 cookies. Enjoy!

Cheese, cheese and more cheese.  Boy, do we love our dairy products but our award-winning cheese is one of our favorites.  From snacking cheese to spreadable cheese, we have you covered with flavorful, top-notch, incredible-tasting cheese!

But in order to enjoy your cheese, you need the right tools.  We are here to help guide you in the right direction.

Cutting Boards.  Make sure you have a cutting board on hand.  This comes in handy when you are cutting the cheese (ha ha) for company or just snacking.  Protect your countertops with this handy tool.  If you want a great gift for your cheese-loving friends, be sure to stop by our Cowfé for beautiful marble cutting boards!

Cheese Graters.  Need to add flavor to a recipe or top a salad with some shredded cheese?  You’re going to need a cheese grater!  We have mini graters available in our shop. Grab our Mozzarella cheese for a great addition to an Italian-inspired dish.

Cheese Slicer. Lunch time?  Let’s make a scrumptious sandwich with a sweet slice of cheese!  You’ll need a cheese slicer for this process.  Create thick and thin slices, whatever your heart desires.  Slice up some Provolone or Calico for all your sandwich needs.

Cheese Spreader. A cheese spreader is a must-have for your kitchen gadget arsenal.  These small tools come in handy when you have softer cheeses.  Spread some cheesy goodness onto your favorite cracker for a quick snack or to create some lovely hors d’oeuvres for guests!

Cheese Knife.  Lastly, you will need a good cheese knife for all of those great semi-soft cheese varieties such as our Farmers cheese or Swiss cheese!

Beer Dinner at The Farmhouse Restaurant

Join us Thursday, April 26th at 6 PM for a beer dinner, hosted by The Farmhouse & St. John Malt Brothers! The menu is set with South American inspired cuisine and each dish is paired with brews from St. John Malt Brothers.

Bartenders will start the evening with a blackberry mojito, but then Chef Jorge will take the reigns for an amuse-bouche course of Leche de Tigre. Fish marinated in citrus, fried calamari, and a sweet potato mousse, make this a course you can’t skip out on. It’s the perfect entrance to an evening of unique tastes from plate to glass. The second course of the evening is a Quinoa and Octopus Salad served with a mixture of roasted corn and poblano pepper that rests on a bed of quinoa and topped with an aioli dressing. The third course is a modern twist on a classic, the Papa Rellena, a potato stuffed with Fair Oaks Farms’ filet mignon, with hard egg and a bell pepper crema. Next up is Arroz con Pollo, a dish full of comforting chicken, beer braised rice, cilantro, English peas, and carrots. The last entree for the night is an extravagant Jales de Mariscos with fried seafood, yucca, tartar sauce, aji aioli, and salsa criolla. To finish the evening, a chocolate cake dessert will be served, topped with Coconut Whip, Chocolate Sauce, and Fair Oaks Farms Vanilla Bean Ice Cream. Each dish is paired with a delicious beer from St. John Malt Brothers.

Homemade Beer Cheese Soup with Chives and Bread

Cheddar Bacon Beer Soup

The temperatures are dropping lower by the day, so keep yourself warm with this creamy soup, filled with smooth and spicy flavors!

Ingredients

  • 1 pound Farmstead Bacon
  • 1 small onion
  • 1 large jalapeno
  • 2 cloves garlic, minced
  • 1 tablespoon thyme, chopped
  • 1 bottle lager or pilsner
  • 2 1/4 cup chicken broth
  • 4 tablespoons butter
  • 1/4 all-purpose flour
  • 1 cup heavy cream
  • 1/2 pound Fair Oaks Farms Cheddar 1 Year Cheese
  • 4 ounces Fair Oaks Farms Smoked Gouda Cheese
  • salt
  • pepper
  • garlic bread to serve

Instructions

  1. Cook the Farmstead Bacon until the fat is rendered and bacon is crisp. Remove bacon from pan, but use drippings to cook onion, jalapeno, garlic, and thyme, until soft. Add half the beef and cook until reduced by half, then the chicken broth until simmering.
  2. In a small skillet, melt butter. Add flour and cook over medium heat, stirring until lightly browned. Whisk roux into soup mixture until incorporated and simmering. Cook until thickened.
  3. Add heavy cream, Fair Oaks Farms cheeses, and remaining beer. Simmer, stirring occasionally, until thick and creamy. Add bacon, stir, then season with salt and pepper to taste. Add more broth if the soup is too thick, bit by bit.
  4. Serve warm with garlic bread.

If you are listening to your stomach growl or just out on the road and need to stretch your legs then there’s no better place on the long stretch of I65 between Indianapolis and Chicago than the Cowfé at Fair Oaks Farms.

 

Tucked into the cornfields of northwest Indiana, you will find a farm that is unlike any other of its kind.   The first business to occupy the campus of Fair Oaks Farms was the Cowfé, which was erected in 2003.

Originally the Cowfé was a place where people could grab a bite to eat and also learn about the different cheeses that we produce here fresh from the farm. Since then, it has evolved into its own unique experience that keeps people talking.

 

The Cowfé is now home to our Greek yogurt plant, ice cream and cheese production. You can watch the production through glass windows as you taste your Mint Chocolate Chip ice cream, bite into a melted and crispy grilled cheese sandwich or sip a hot cup of Starbucks coffee.

The Cowfé is normally open from 7:30a until 6:00p CST (currently open winter hours: 8a-5p CST) and offers breakfast, lunch and early dinner options.

 

If you’re looking to remember your experience here on the farm, the Cowfé is also home to the destinations souvenir shop, which has plenty of sweatshirt, t-shirt and other great souvenir options.
