Fair Oaks Farms’ Smoked Gouda Awarded First Place Honors at the 2018 World Dairy Expo Championship

Fair Oaks Farms® Master Cheesemaker Bruce Workman’s Smoked Gouda took home first place honors at the 2018 World Dairy Expo Championship Dairy Product Contest held in Madison, WI on August 21-23! Fair Oaks Farms has been the recipient of numerous awards at the World Dairy Expo Championship since first entering in 2004.

“Fair Oaks Farms is so humbled to receive such high recognition at the World Dairy Expo,” said Julie Basich, Fair Oaks Farms COO, “We are very proud of Bruce and his talents. We continue to control all aspects of the farm and truly believe that the Magic is in our Milk.” The 2018 World Dairy Expo Championship Competition saw more than 1,400 entries.

Smoked Gouda Mac and Cheese

Ingredients

  • 1/4 tsp. ground white pepper
  • 1/2 tsp. salt
  • 1 (16 oz.) package seashell pasta
  • 2 tbsp. all-purpose flour
  • 2 1/2 tbsp. butter
  • 2 1/2 cups Fair Oaks Farms milk
  • 4 oz. Fair Oaks Farms' Smoked Gouda cheese, shredded

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Lightly grease a 15x10 baking dish.

  3. Boil a large pot of lightly salted water.

  4. Add package of seashell pasta and cook for 8-10 minutes. Drain.

  5. Over medium heat, melt butter in a small saucepan. Mix all-purpose flour. Cook until a roux forms. Stir in the Fair Oaks Farms milk, salt, and ground white pepper. Stir until sauce thickens.

  6. Remove from heat. Stir in shredded Fair Oaks Farms' award-winning Smoked Gouda cheese.

  7. Combine cooked pasta and cheese sauce. Transfer to prepared dish.

  8. Bake in the oven for 15 minutes, or until heated.

  9. Serve dish to guests. Enjoy!
