How to Make the Perfect Cheese Board 101

Are you having a family get-together? Girls’ night? Office party? Do you need a good reason to make a delicious cheese board? At Fair Oaks Farms®, we understand that building a cheese board is like creating a piece of art. Regardless of your skill level, we are here to help you create the perfect cheese board for your next party! Be sure to take notes because How to Make the Perfect Cheese Board 101 is now in session.

The most critical factor behind making the perfect cheese board is offering your guests a variety of cheeses. According to DiBruno Brothers manager, Sande Friedman, “the foundation of a good cheese plate will showcase several different cheeses of varying textures, milks, and ages.” The key is to find cheeses that will nicely complement and contrast one another. For your cheese board, we recommend purchasing Fair Oaks Farms’ award-winning Habanero Havarti, Muenster, Smoked Gouda, and Sweet Swiss. Spicy – check. Mild – check. Smoky and sweet – check and check. You’re all set!

Find the Perfect Pairings

It is important to note that your cheese board should not be limited to, well, cheese. To bring a variety of flavors to your board, you must be creative in finding the perfect accompaniments!

First, let’s satisfy our sweet tooth! A cheese board isn’t complete without fruit, both dried and fresh! The Fair Oaks Farms U-Pick Orchard will officially open in 2019 for the public to pick Cameo, Crimson Crisp, Gala, Gold Rush, Honeycrisp, Jonagold, Pixie Crunch, and Zestar apples! We highly recommend our juicy Honeycrisp. To give the cheese board color, add dried apricots. Next, have some fun selecting condiments! We recommend adding honey, assorted jams, or homemade Apple Chutney from our very own Cowfé and Dairycatessen to give your cheese board a sweet savor.

To complement that sweet tooth, consider adding an array of salted nuts that will give your board a crunch. For non-vegetarians, try Fair Oaks Farms’ Premium Beef Summer Sausage (or Jalapeño) and tasty Beef Sticks, produced exclusively with our very own beef! Lastly, crackers are an essential item when creating a cheese board. Fill empty spaces on the cheese board with a variety of crackers and crispy breadsticks.

July is National Ice Cream Month!

Did you know that July is National Ice Cream Month? We’re celebrating by sharing our favorite homemade chocolate ice cream recipe made with Fair Oaks Farms® milk – so good you can taste the nostalgia! Please read below to see how it’s made.

Homemade Chocolate Ice Cream

An easy-to-make ice cream recipe that will be sure to bring back childhood memories!

Ingredients

  • 3/4 cup sugar
  • 1 cup Fair Oaks Farms Milk
  • 2 cups heavy cream
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened cocoa powder
  • 3 egg yolk lightly beaten
  • 2 oz semisweet chocolate chips chopped

Instructions

  1. Whisk unsweetened cocoa powder, Fair Oaks Farms milk, salt, and sugar in a pot over medium heat until mixture simmers.

  2. Place egg yolks in small mixing bowl. Pour 1/2 cup of hot mixture in with egg yolks.

  3. Once combined, return the mixture to the pot. Heat until mixture thickens. Be sure not to boil it!

  4. Away from the heat, stir in chopped semisweet chocolate chips until melted.

  5. Pour mixture into a chilled bowl. Refrigerate for 2 hours. Be sure to stir the mixture every 30 minutes.

  6. After the chocolate mixture has cooled, mix in the heavy cream and vanilla extract. Pour the mixture into an ice cream maker and let the machine do its work!

  7. After mixing, store the chocolate ice cream in a freeze. Time varies by machine manufacturer's directions.

  8. Serve in a bowl, cone, or in between 2 cookies. Enjoy!

Beer Dinner at The Farmhouse Restaurant

Join us Thursday, April 26th at 6 PM for a beer dinner, hosted by The Farmhouse & St. John Malt Brothers! The menu is set with South American inspired cuisine and each dish is paired with brews from St. John Malt Brothers.

Bartenders will start the evening with a blackberry mojito, but then Chef Jorge will take the reigns for an amuse-bouche course of Leche de Tigre. Fish marinated in citrus, fried calamari, and a sweet potato mousse, make this a course you can’t skip out on. It’s the perfect entrance to an evening of unique tastes from plate to glass. The second course of the evening is a Quinoa and Octopus Salad served with a mixture of roasted corn and poblano pepper that rests on a bed of quinoa and topped with an aioli dressing. The third course is a modern twist on a classic, the Papa Rellena, a potato stuffed with Fair Oaks Farms’ filet mignon, with hard egg and a bell pepper crema. Next up is Arroz con Pollo, a dish full of comforting chicken, beer braised rice, cilantro, English peas, and carrots. The last entree for the night is an extravagant Jales de Mariscos with fried seafood, yucca, tartar sauce, aji aioli, and salsa criolla. To finish the evening, a chocolate cake dessert will be served, topped with Coconut Whip, Chocolate Sauce, and Fair Oaks Farms Vanilla Bean Ice Cream. Each dish is paired with a delicious beer from St. John Malt Brothers.

Fair Oaks Farms’ Cheese Curds

Our grilled cheese is almost famous, but our cheese curds have also made a name for themselves in Northwest Indiana. They’re the perfect starter — but we wouldn’t judge if you wanted to make a meal out of them! Fair Oaks Farms’ cheddar cheese curds are battered and deep-fried to perfection until they’re crunchy on the outside and gooey in the middle. Curds are piled high in a small basket, then sprinkled with parmesan cheese. These curds are terrific on their own, but we serve them with jalapeño ranch and marinara just in case you want a flavorful touch. Ribeye Burger

It’s the most popular burger on our menu, leading the pack with a half-pound of dry aged ribeye, chipotle mayo, baby arugula, tomato, and Fair Oaks Farms Havarti Pepper cheese. It’s hard to pick a frontrunner-ingredient that takes the sandwich over the top, but many claim it to be the Havarti Pepper cheese. The smooth taste of beef mixes perfectly with the spicy tang of chipotle mayo and Havarti Pepper cheese, giving it the ideal level of heat for anyone who desires a bit of a punch on their burger. Havarti, in general, is the most popular cheese to use on burgers because of how perfectly it melts. Adding the kick of the pepper only heightens this burger’s flavor profile, making it one of the most popular cheesy items on our menu.

Ultimate Grilled Cheese

It wasn’t until this fall that the Farmhouse decided to try their hand at the best grilled cheese. Our Cowfé has always held it down with the simple classics, but the Farmhouse took it to the next level when they premiered the Ultimate Grilled Cheese this fall. It’s made up of buttery Texas Toast, bacon, tomato, pesto aioli, and three different kinds of Fair Oaks Farms cheeses: our award-winning Muenster, fan-favorite Cheddar, and the spicy Havarti Pepper. Three types of cheese team up to take this grilled cheese to the top, adding a mix of smooth, sharp, and spicy flavors to compliment the salt of the bacon, juiciness of the tomato, and fresh taste of the pesto aioli. Homemade Beer Cheese Soup with Chives and Bread

Cheddar Bacon Beer Soup

The temperatures are dropping lower by the day, so keep yourself warm with this creamy soup, filled with smooth and spicy flavors!

Ingredients

  • 1 pound Farmstead Bacon
  • 1 small onion
  • 1 large jalapeno
  • 2 cloves garlic, minced
  • 1 tablespoon thyme, chopped
  • 1 bottle lager or pilsner
  • 2 1/4 cup chicken broth
  • 4 tablespoons butter
  • 1/4 all-purpose flour
  • 1 cup heavy cream
  • 1/2 pound Fair Oaks Farms Cheddar 1 Year Cheese
  • 4 ounces Fair Oaks Farms Smoked Gouda Cheese
  • salt
  • pepper
  • garlic bread to serve

Instructions

  1. Cook the Farmstead Bacon until the fat is rendered and bacon is crisp. Remove bacon from pan, but use drippings to cook onion, jalapeno, garlic, and thyme, until soft. Add half the beef and cook until reduced by half, then the chicken broth until simmering.
  2. In a small skillet, melt butter. Add flour and cook over medium heat, stirring until lightly browned. Whisk roux into soup mixture until incorporated and simmering. Cook until thickened.
  3. Add heavy cream, Fair Oaks Farms cheeses, and remaining beer. Simmer, stirring occasionally, until thick and creamy. Add bacon, stir, then season with salt and pepper to taste. Add more broth if the soup is too thick, bit by bit.
  4. Serve warm with garlic bread.

Our Cowfé is the Cow-Finest!

 

If you are listening to your stomach growl or just out on the road and need to stretch your legs then there’s no better place on the long stretch of I65 between Indianapolis and Chicago than the Cowfé at Fair Oaks Farms.

 

Tucked into the cornfields of northwest Indiana, you will find a farm that is unlike any other of its kind.   The first business to occupy the campus of Fair Oaks Farms was the Cowfé, which was erected in 2003.

Originally the Cowfé was a place where people could grab a bite to eat and also learn about the different cheeses that we produce here fresh from the farm. Since then, it has evolved into its own unique experience that keeps people talking.

 

The Cowfé is now home to our Greek yogurt plant, ice cream and cheese production. You can watch the production through glass windows as you taste your Mint Chocolate Chip ice cream, bite into a melted and crispy grilled cheese sandwich or sip a hot cup of Starbucks coffee.

The Cowfé is normally open from 7:30a until 6:00p CST (currently open winter hours: 8a-5p CST) and offers breakfast, lunch and early dinner options.

 

If you’re looking to remember your experience here on the farm, the Cowfé is also home to the destinations souvenir shop, which has plenty of sweatshirt, t-shirt and other great souvenir options.
