Brunch will be served from 10:30 am to 3 pm.

Fondue for Two

This Valentine’s Day, don’t stick to the simple favorites you’ve had every single year. Use a blast from the past to make your V-Day exciting this year, with Fondue for Two! Use Fair Oaks Farms cheese to ensure melty, gooey, quality deliciousness!

Ingredients

  • 1 loaf French bread, cut into approximately 1-inch cubes
  • 8 ounces Fair Oaks Farms Sweet Swiss Cheese, shredded
  • 2 tablespoons all-purpose flour
  • 1 clove garlic, minced
  • 1 cup dry white wine
  • 1 tablespoon lemon juice

Instructions

  1. After shredding Fair Oaks Farms Sweet Swiss, place in a bowl or resealable plastic bag and coat with all-purpose flour.
  2. Add garlic and wine to a fondue pot or large saucepan, simmer and then stir in lemon juice.
  3. Add cheese and flour mixture slowly, stirring with a wire whisk to prevent lumps.
  4. Keep warm on a low setting while serving, to prevent cheese from hardening. Use fondue forks to spear bread and begin dipping!

Tips & Tricks

  • Not a fan of our Sweet Swiss cheese or looking for a different flavor? No problem! Use any Fair Oaks Farms cheese to get the exact taste you want. The above recipe might need to be adjusted slightly, but ultimately it’s about what satisfies you! We recommend trying Asiago, 5 Year Cheddar, or even Havarti Pepper for a kick!
  • French bread is just a suggestion! Any kind of crusty bread will do, such as sourdough, ciabatta, or Italian. Or use anything that marries well with cheese, like cubes of ham, bacon, or steak, fresh mushrooms, broccoli florets, carrots, or apple wedges. Be creative!
  • There are many deviations of simple fondue all over the internet. Look up your own recipes and try to find something that tickles your fancy, such as adding spices and other ingredients to the cheese.
  • If the cheese starts thickening, add a bit of wine (or milk, if you choose to keep your cheese nonalcoholic).
  • Most importantly, have fun! Fondue is meant to be experimental and customizable!

Cheese Counter Exclusive!

Have you had the chance to visit our cheese counter at the Cowfé? At the counter, you can sample as many Fair Oaks Farms cheeses as you please! The cheese counter attendants are there to answer your questions and help you select your new favorite cheese. This week we have an exclusive interview with our cheese counter manager, Kim! (Keep in mind, Valentine’s Day is right around the corner, and who doesn’t love cheese?!)

What is the most popular cheese purchased at the cheese counter?
Kim: Sweet Swiss is the most popular purchased cheese.

What cheese do people sample the most?
Kim: The three top kinds of cheese that are sampled are Sweet Swiss, Batterkase, Aged Gouda.

What is the most popular gift collection purchased at the cheese counter?
Kim:
This year the box that sold the most in the Cowfé was the Heartland.

Have you tried all of the cheeses?
Kim: Yes, when you train in cheese you get to try all of the cheeses to help you with learning the descriptions.

What is your favorite cheese?
Kim: My favorite cheese is our 9-Year Cheddar, it has the most aged crystallization and a citric after-flavor.

Are visitors allowed to create their own collection with a branded hat box?
Kim: Most definitely, our hat boxes are $10, and you can put anything you would like in them.

What are the most frequently asked questions at the cheese counter?
Kim: The most frequently asked question is, what cheese are you known for here at Fair Oaks?

Approximately how many people sample cheese per day?
Kim: We sample to about 250 people on a slow day!

How can visitors improve their sampling experience?
Kim: Try all different kinds of cheese — you never know what you will like!

What is the spiciest cheese we have?
Kim: Our spiciest cheese is Havarti Habanero, it has a little kick right at the end.

What is the mildest cheese we have?
Kim: The mildest has to be our Butterkase, it’s a Danish cheese that pairs well with apples and grapes.

What is the smokiest cheese we have?
Kim: Our Smoked Gouda is our smokiest, it’s been smoked in a smokehouse with hickory smoke. It actually won first place at the World Dairy Expo in 2017!

How does the taste of the cheddars change from year to year?
Kim: Each year our cheddar is aged it gets more age crystallization and a citric after flavor.

Are all of the cheeses made from Fair Oaks Farms milk?
Kim: Yes, all of our cheeses are made with our products, Fair Oaks Farms milk and cream.

Where are the cheeses made?
Kim: Our Fair oaks cheese is made at one of our off-site facilities in Verona, Wisconsin.

Classic and Quick Cheesy Entrees for National Cheese Lovers Day

Picking out the unique recipes that appear on this blog isn’t always easy. There are so many incredible recipes that come across our desks, and so many perfect Fair Oaks Farms products to choose to exhibit. When it comes to National Cheese Lovers Day, we wanted to pick a recipe that everyone could enjoy, but we couldn’t settle on just one. We’ve chosen two different recipes, a sandwich and a steak, that use Fair Oaks Farms cheeses creatively. Our cheeses add to the depth of flavor in each dish, so whichever you choose to make you won’t be disappointed!

Cheesy Crusted Steak Rolls

Ingredients

  • salt and pepper to taste
  • 1 to 2 cups of mushrooms, diced
  • 2 small red onions, diced
  • 3 cups fresh spinach
  • 1 pound beef sirloin steak
  • 8 ounces Fair Oaks Farms Provolone cheese, sliced
  • 2 to 3 teaspoons butter or vegetable oil

Instructions

  1. Preheat oven to 400 degrees.
  2. Flatten out steak, using plastic wrap and a meat tenderizer. After, season both sides with salt and pepper or other seasonings of your choosing. Set to the side.
  3. Heat skillet and add butter or vegetable oil. Once hot, add onions and mushrooms and cook until tender. Turn off the stove and add spinach, cooking until wilted.
  4. Spread spinach, onion, and mushroom mixture onto flattened steak, careful not to reach the edges. Leave about an inch border.
  5. Place slices of provolone over steak and mixture.
  6. Roll steak tightly, then secure with skewers or twine, about 2 inches apart. Cut between each skier or twine so that each slice is even.
  7. Using the same skillet you used for spinach, onion, and mushroom mixture, add another teaspoon of oil or butter and heat. Once warm add the steak rolls and cook each side for about 3 minutes. Then place in oven for about 5 minutes.
  8. Serve warm with salad or side dish of your choosing.

 

Monte Cristo Sandwich

Ingredients

  • 1 tablespoon Dijon mustard
  • 4 ounces Fair Oaks Farms Smoked Sweet Swiss
  • 4 ounces deli ham, thinly sliced
  • 4 white sandwich bread slices
  • 2 large eggs
  • 1/2 cup Fair Oaks Farms Whole Milk
  • 2 tablespoons salted butter
  • Powdered sugar, for dusting
  • Raspberry jam, for serving

Instructions

  1. Divide mustard, cheese, and ham evenly between two bread slices, placing the second slice on top of each.
  2. Whisk eggs and milk.
  3. Place butter in medium skillet, then dip sandwiches in milk mixture and place on skillet. Cook until golden brown on each side.
  4. Serve warm with powdered sugar on top and raspberry jam on the side.

Fair Oaks Farms’ Cheese Curds

Our grilled cheese is almost famous, but our cheese curds have also made a name for themselves in Northwest Indiana. They’re the perfect starter — but we wouldn’t judge if you wanted to make a meal out of them! Fair Oaks Farms’ cheddar cheese curds are battered and deep-fried to perfection until they’re crunchy on the outside and gooey in the middle. Curds are piled high in a small basket, then sprinkled with parmesan cheese. These curds are terrific on their own, but we serve them with jalapeño ranch and marinara just in case you want a flavorful touch. Share them with your table or keep them to yourself, either way, you’ll be happy you indulged in one of our best recipes!

Ribeye Burger

It’s the most popular burger on our menu, leading the pack with a half-pound of dry aged ribeye, chipotle mayo, baby arugula, tomato, and Fair Oaks Farms Havarti Pepper cheese. It’s hard to pick a frontrunner-ingredient that takes the sandwich over the top, but many claim it to be the Havarti Pepper cheese. The smooth taste of beef mixes perfectly with the spicy tang of chipotle mayo and Havarti Pepper cheese, giving it the ideal level of heat for anyone who desires a bit of a punch on their burger. Havarti, in general, is the most popular cheese to use on burgers because of how perfectly it melts. Adding the kick of the pepper only heightens this burger’s flavor profile, making it one of the most popular cheesy items on our menu.

Ultimate Grilled Cheese

It wasn’t until this fall that the Farmhouse decided to try their hand at the best grilled cheese. Our Cowfé has always held it down with the simple classics, but the Farmhouse took it to the next level when they premiered the Ultimate Grilled Cheese this fall. It’s made up of buttery Texas Toast, bacon, tomato, pesto aioli, and three different kinds of Fair Oaks Farms cheeses: our award-winning Muenster, fan-favorite Cheddar, and the spicy Havarti Pepper. Three types of cheese team up to take this grilled cheese to the top, adding a mix of smooth, sharp, and spicy flavors to compliment the salt of the bacon, juiciness of the tomato, and fresh taste of the pesto aioli. Homemade Beer Cheese Soup with Chives and Bread

Cheddar Bacon Beer Soup

The temperatures are dropping lower by the day, so keep yourself warm with this creamy soup, filled with smooth and spicy flavors!

Ingredients

  • 1 pound Farmstead Bacon
  • 1 small onion
  • 1 large jalapeno
  • 2 cloves garlic, minced
  • 1 tablespoon thyme, chopped
  • 1 bottle lager or pilsner
  • 2 1/4 cup chicken broth
  • 4 tablespoons butter
  • 1/4 all-purpose flour
  • 1 cup heavy cream
  • 1/2 pound Fair Oaks Farms Cheddar 1 Year Cheese
  • 4 ounces Fair Oaks Farms Smoked Gouda Cheese
  • salt
  • pepper
  • garlic bread to serve

Instructions

  1. Cook the Farmstead Bacon until the fat is rendered and bacon is crisp. Remove bacon from pan, but use drippings to cook onion, jalapeno, garlic, and thyme, until soft. Add half the beef and cook until reduced by half, then the chicken broth until simmering.
  2. In a small skillet, melt butter. Add flour and cook over medium heat, stirring until lightly browned. Whisk roux into soup mixture until incorporated and simmering. Cook until thickened.
  3. Add heavy cream, Fair Oaks Farms cheeses, and remaining beer. Simmer, stirring occasionally, until thick and creamy. Add bacon, stir, then season with salt and pepper to taste. Add more broth if the soup is too thick, bit by bit.
  4. Serve warm with garlic bread.
