Are you having a family get-together? Girls’ night? Office party? Do you need a good reason to make a delicious cheese board? At Fair Oaks Farms®, we understand that building a cheese board is like creating a piece of art. The most critical factor behind making the perfect cheese board is offering your guests a variety of cheeses. According to DiBruno Brothers manager, Sande Friedman, “the foundation of a good cheese plate will showcase several different cheeses of varying textures, milks, and ages.” The key is to find cheeses that will nicely complement and contrast one another. Find the Perfect Pairings

It is important to note that your cheese board should not be limited to, well, cheese. To bring a variety of flavors to your board, you must be creative in finding the perfect accompaniments!

First, let’s satisfy our sweet tooth! A cheese board isn’t complete without fruit, both dried and fresh! The Fair Oaks Farms U-Pick Orchard will officially open in 2019 for the public to pick Cameo, Crimson Crisp, Gala, Gold Rush, Honeycrisp, Jonagold, Pixie Crunch, and Zestar apples! We highly recommend our juicy Honeycrisp. To give the cheese board color, add dried apricots. Next, have some fun selecting condiments! We recommend adding honey, assorted jams, or homemade Apple Chutney from our very own Cowfé and Dairycatessen to give your cheese board a sweet savor.

To complement that sweet tooth, consider adding an array of salted nuts that will give your board a crunch. Pumpkin Spice Latte

Enjoy this easy-to-make drink in the comfort of your kitchen!

Ingredients

  • 1 cup Fair Oaks Farms milk
  • 2 tbsp pure pumpkin puree
  • 1 tbsp sugar
  • 1/4 tsp pumpkin pie spice
  • 1/4 tsp pure vanilla extract
  • 1/4 cup hot espresso or strong-brewed coffee
  • sweetened whipped cream

Instructions

  1. In a medium microwave-safe bowl, mix the Fair Oaks Farms milk, pure pumpkin puree, sugar, pumpkin pie spice, and vanilla extract. Place plastic over the bowl and vent with small holes.

  2. Microwave milk until hot (1 to 2 minutes). Whisk until the milk mixture is foamy.

  3. Pour hot espresso or strong-brewed coffee into a mug.

  4. Add foamed milk. Top with whipped cream. Sprinkle extra pumpkin pie spice.

Maybe the sell-by date was a day or two ago, and you don’t have the heart to pour the wasted milk (and your money) down the drain. Well, the good news is that you don’t have to! Check out these easy recipes that will help you get more out of your leftover moo!

Good Old-Fashioned Pancakes

Hungry for pancakes? Start your morning off right with a stack of these delicious pancakes made with your leftover milk!

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tbsp white sugar
  • 1 1/4 cups Fair Oaks Farms milk
  • 1 egg
  • 3 tbsp butter, melted

Instructions

  1. In a large bowl, sift the flour, baking powder, salt, and sugar. Make a well. Pour in Fair Oaks Farms milk, egg, and melted butter. Mix until smooth.

  2. Lightly oil a griddle or frying pan. Heat over medium-high. Pour the batter onto the griddle or frying pan. Use approx. 1/4 cup for each pancake. Brown on both sides. Serve hot with butter and maple syrup.

 

Simple Macaroni and Cheese

Honestly, who doesn't love a good bowl of macaroni and cheese? We know we do! Try this simple recipe using your leftover milk!

Ingredients

  • 1 (8 oz.) box elbow macaroni
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1/2 tsp salt
  • 2 cups Fair Oaks Farms milk
  • 2 cups Fair Oaks Farms Cheddar cheese, shredded
  • Ground black pepper to taste

Instructions

  1. Boil a large pot of lightly salted water. Cook elbow macaroni in the boiling water. Occasionally stir until cooked, but firm (approx. 8 minutes). Then drain.

  2. Over medium heat, melt butter in a saucepan. Stir in flour, salt, and pepper until smooth. Slowly pour Fair Oaks Farms milk into butter-flour mixture until bubbling. Shred Fair Oaks Farms Cheddar cheese with a grater. Add shredded cheese to the milk mixture. Stir until cheese is melted.

  3. Add macaroni into the cheese sauce. Mix until coated.

Broccoli Cheddar Soup

Ingredients

  • 1/2 cup butter
  • 1 onion, chopped
  • 1 (16 oz.) package frozen chopped broccoli
  • 4 (14.5 oz.) can chicken broth
  • 1 lb. Fair Oaks Farms Cheddar cheese, cubed
  • 2 cups Fair Oaks Farms milk
  • 1 tbsp garlic powder
  • 2/3 cup cornstarch
  • 1 cup water

Instructions

  1. Using a stockpot, melt the butter over medium heat. Cook the onion in butter until softened. Stir in the chopped broccoli. Add the chicken broth. Simmer for 10 to 15 minutes, or until broccoli is tender.

  2. Reduce the heat. Stir in the Fair Oaks Farms Cheddar cheese cubes until melted. Mix in Fair Oaks Farms milk and garlic powder.

  3. In a separate bowl, stir the cornstarch in water until dissolved. Then, add mixture to soup. Stir soup frequently until it thickens.

 

Homemade Chocolate Ice Cream

Don't worry - we didn't forget about the dessert! Do you still have extra milk? Try this easy-to-make ice cream recipe that will bring back childhood memories!

Ingredients

  • 3/4 cup sugar
  • 1 cup Fair Oaks Farms milk
  • 2 cups heavy cream
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened cocoa powder
  • 3 egg yolks, lightly beaten
  • 2 oz. semisweet chocolate chips, chopped

Instructions

  1. Whisk unsweetened cocoa powder, Fair Oaks Farms milk, salt, and sugar in a pot over medium heat until mixture simmers.
  2. Place egg yolks in small mixing bowl. Pour 1/2 cup of hot mixture in with egg yolks.
  3. Once combined, return the mixture to the pot. Heat until mixture thickens. Be sure not to boil it!
  4. Away from the heat, stir in chopped semisweet chocolate chips until melted.
  5. Pour mixture into a chilled bowl. Refrigerate for 2 hours. Be sure to stir the mixture every 30 minutes.
  6. After the chocolate mixture has cooled, mix in the heavy cream and vanilla extract. Pour the mixture into an ice cream maker and let the machine do its work!
  7. After mixing, store the chocolate ice cream in a freeze. Time varies by machine manufacturer's directions.
  8. Serve in a bowl, cone, or in between 2 cookies. Enjoy!

Avoid These Cheese Storage Mistakes

We don’t know about you, but we LOVE cheese! Aged Gouda, Butterkase, Sweet Swiss – there are so many mouthwatering options available at Fair Oaks Farms®! Avoid these three common missteps when storing cheese to ensure that your purchase maintains its flavor and appearance for as long as possible!

Mistake #1: Wrapping your cheese in plastic material.

At home, wrap cheese using porous materials, such as cheese paper, butcher paper, or wax paper. These materials are breathable and eliminate the plastic flavors that can permeate cheese.

Mistake #2: Storing cheese in the coldest part of the refrigerator.

Store cheese in the produce drawer of your refrigerator. Cheese thrives in warmer temperatures. Plus, the cold slows down the ripening process and tends to dry out cheese at a quicker rate.

Mistake #3: Not using an extra layer of protection.

It is essential to give your cheese an extra layer of protection before storing. As mentioned above, do not use plastic! Instead, use a paper material or a container with holes. Holes allow the cheese to breathe.
