Classic and Quick Cheesy Entrees for National Cheese Lovers Day

Picking out the special recipes that appear on this blog isn’t always easy. There are so many incredible recipes that come across our desks, and so many perfect Fair Oaks Farms products to choose to exhibit. When it comes to National Cheese Lovers Day, we wanted to pick a recipe that everyone could enjoy, but we couldn’t settle on just one. We’ve chosen two different recipes, a sandwich and a steak, that use Fair Oaks Farms cheeses creatively. Our cheeses add to the depth of flavor in each dish, so whichever you choose to make you won’t be disappointed!

Cheesy Crusted Steak Rolls

Ingredients

  • salt and pepper to taste
  • 1 to 2 cups of mushrooms, diced
  • 2 small red onions, diced
  • 3 cups fresh spinach
  • 1 pound beef sirloin steak
  • 8 ounces Fair Oaks Farms Provolone cheese, sliced
  • 2 to 3 teaspoons butter or vegetable oil

Instructions

  1. Preheat oven to 400 degrees.
  2. Flatten out steak, using plastic wrap and a meat tenderizer. After, season both sides with salt and pepper or other seasoning of your choosing. Set to the side.
  3. Heat skillet and add butter or vegetable oil. Once hot, add onions and mushrooms and cook until tender. Turn off stove and add spinach, cooking until wilted.
  4. Spread spinach, onion, and mushroom mixture onto flattened steak, careful not to reach the edges. Leave about an inch border.
  5. Place slices of provolone over steak and mixture.
  6. Roll steak tightly, then secure with skewers or twine, about 2 inches apart. Cut between each skier or twine so that each slice is even.
  7. Using the same skillet you used for spinach, onion, and mushroom mixture, add another teaspoon of oil or butter and heat. Once warm add the steak rolls and cook each side for about 3 minutes. Then place in oven for about 5 minutes.
  8. Serve warm with salad or side dish of your choosing.

Monte Cristo Sandwich

Ingredients

  • 1 tablespoon Dijon mustard
  • 4 ounces Fair Oaks Farms Smoked Sweet Swiss
  • 4 ounces deli ham, thinly sliced
  • 4 white sandwich bread slices
  • 2 large eggs
  • 1/2 cup Fair Oaks Farms Whole Milk
  • 2 tablespoons salted butter
  • Powdered sugar, for dusting
  • Raspberry jam, for serving

Instructions

  1. Divide mustard, cheese, and ham evenly between two bread slices, placing a second slice on top of each.
  2. Whisk eggs and milk.
  3. Place butter in medium skillet, then dip sandwiches in milk mixture and place on skillet. Cook until golden brown on each side.
  4. Serve warm with powdered sugar on top and raspberry jam on the side.

In case you’ve been in hibernation, hiding away from this terribly cold weather, Saturday is National Cheese Lovers Day! And if there’s anything we love here at Fair Oaks Farms, it’s cheese! You can taste that love when you bite into any of our award-winning cheeses, and one of the best ways to try our cheeses is at the Farmhouse Restaurant! Not only is our menu packed with meat options that come straight from our farms, but there are plenty of dishes that showcase our creamy, perfected cheeses as well! Below we’ve chosen the top 3 cheesiest items you MUST try the next time you make a stop at the Farmhouse!

Fair Oaks Farms’ Cheese Curds

Our grilled cheese is almost famous, but our cheese curds have also made a name for themselves in Northwest Indiana. They’re the perfect starter — but we wouldn’t judge if you wanted to make a meal out of them! Fair Oaks Farms cheddar cheese curds are battered and deep-fried to perfection, until they’re crunchy on the outside and gooey in the middle. Curds are piled high in a small basket, then sprinkled with parmesan cheese. These curds are terrific on their own, but we serve them with jalapeño ranch and marinara just in case you want a flavorful touch. Share them with your table or keep them to yourself, either way you’ll be happy you indulged in one of our best recipes!

Ribeye Burger

It’s the most popular burger on our menu, leading the pack with a half-pound of dry aged ribeye, chipotle mayo, baby arugula, tomato, and Fair Oaks Farms Havarti Pepper cheese. It’s hard to pick a frontrunner-ingredient that really takes the sandwich over the top, but many claim it to be the Havarti Pepper cheese. The smooth taste of beef mixes perfectly with the spicy tang of chipotle mayo and Havarti Pepper cheese, giving it the ideal level of heat for anyone who desires a bit of a punch on their burger. Havarti, in general, is the most popular cheese to use on burgers because of how perfectly it melts. Adding the kick of the pepper only heightens this burger’s flavor profile, making it one of the most popular cheesy items on our menu.

Ultimate Grilled Cheese

It wasn’t until this fall that the Farmhouse decided to try their hand at the best grilled cheese. Our Cowfé has always held it down with the simple classics, but the Farmhouse took it to the next level when they premiered the Ulimate Grilled Cheese this fall. It’s made up of buttery Texas Toast, bacon, tomato, pesto aioli, and three different kinds of Fair Oaks Farms cheeses: our award-winning Muenster, fan-favorite Cheddar, and the spicy Pepper Havarti. Three cheese team up to take this grilled cheese to the top, adding a mix of smooth, sharp, and spicy flavors to compliment the salt of the bacon, juiciness of the tomato, and fresh flavor of the pesto aioli. All the ingredient come together to form the apex comfort food, the grilled cheese of our dreams.

Jamie Oliver’s Chicken in Milk for National Milk Day

While searching the internet far and wide for some of the best recipes involving milk, it was clear there was a frontrunner. On many websites and food blogs, Jamie Oliver’s Chicken in Milk has been awarded the best chicken dish. Reviews of the recipe proclaim its milk sauce adds a creamy, delicious touch that completes the dish. We thought we’d share the recipe with you to celebrate National Milk Day. Add your own touch with side dishes displaying complementary taste profiles, such as jasmine rice, greens, or cheesy potatoes.

Ingredients

  • 3 pound whole chicken
  • olive oil
  • 1/2 sticks cinnamon
  • 1 handful fresh sage
  • 2 lemons
  • 10 cloves garlic
  • 2.5 cups Fair Oaks Farms Milk

Instructions

  1. Preheat oven to 375 degrees. Season chicken with salt and pepper, then fry in a pot with a little oil until golden, turning the chicken to get an even color.
  2. Remove chicken from heat, place on plate, then discard oil left in the pot.
  3. Place chicken back in pot with cinnamon, sage, lemon zest, unpeeled garlic cloves, and Fair Oaks Farms Milk.
  4. Cook in oven for 1 hour and 30 minutes, or until cooked throughout. Baste with cooking juices occasionally. The lemon zest will split the milk, but this is ideal and makes the sauce more flavorful.
  5. When finished, pull the meat off the bones and serve with plenty of juices and lemon curds, spooned from the pan.

We’re excited to begin a new year at Fair Oaks Farms! We worked hard last year to create the most fun you could possibly have on a farm, but we’re right back to work for 2018! National Milk Day

You haven’t lived until you’ve tried our milk! Our milk can be found at the Cowfe, Dairycatessan, a supermarket near you, and delivered right to your front door! Kids go crazy for our chocolate milk, but nothing beats cookies and our 2% white. On National Milk Day, January 11th, we’ll be using social media to celebrate, with engaging posts and interactive hashtags to get your feedback about how you like to use Fair Oaks Farms milk! Is it your favorite when it’s frozen to perfection in our ice cream? Or maybe carrying your favorite cereal in the morning? Do you think milk is the best in a soup or recipe? Get your ideas together and celebrate National Milk Day with us!

Cheese Me, Please! Week & National Cheese Lovers Day

Our milk might be to die for, but our cheese is definitely something to live for! We keep a variety of cheese stocked in the same places we sell our milk – the Cowfe, Dairycatessan, a supermarket near you, and delivered right to your front door! We have over 20 flavors, ranging from smoky or sweet, from sharp or spicy! National Cheese Lovers Day is on January 20th, so we encourage you to bring the whole family and fill your tummies with free samples at our Cowfe! Find your favorite cheese and take it home for sandwiches, entrees, and snacks. The entire week of January 15th to the 20th, we’ll be celebrating National Cheese Lovers day in a big way – with Cheese Me, Please! Week on our social media channels! Join us online for engaging posts and interactive hashtags to let us know what your favorite Fair Oaks Farms cheese is, and how you use it to make your cheesiest, favorite foods! Your recipe could appear in a blog on our website, for the whole world to read! We’ll also be sharing exclusive interviews with our cheesiest employees from the Cheese Counter and online sales, so you can get all the details on what makes our cheese the best!

Homemade Beer Cheese Soup with Chives and Bread

Cheddar Bacon Beer Soup

The temperatures are dropping lower by the day, so keep yourself warm with this rich soup, filled with smooth and spicy flavors!

Ingredients

  • 1 pound Farmstead Bacon
  • 1 small onion
  • 1 large jalapeno
  • 2 cloves garlic, minced
  • 1 tablespoon thyme, chopped
  • 1 bottle lager or pilsner
  • 2 1/4 cup chicken broth
  • 4 tablespoons butter
  • 1/4 all-purpose flour
  • 1 cup heavy cream
  • 1/2 pound Fair Oaks Farms Cheddar 1 Year Cheese
  • 4 ounces Fair Oaks Farms Smoked Gouda Cheese
  • salt
  • pepper
  • garlic bread to serve

Instructions

  1. Cook the Farmstead Bacon until the fat is rendered and bacon is crisp. Remove bacon from pan, but use drippings to cook onion, jalapeno, garlic, and thyme, until soft. Add half the beef and cook until reduced by half, then the chicken broth until simmering.
  2. In small skillet, melt butter. Add flour and cook over medium heat, stirring until lightly browned. Whisk roux into soup mixture until incorporated and simmering. Cook until thickened.
  3. Add heavy cream, Fair Oaks Farms cheeses, and remaining beer. Simmer, stirring occasionally, until thick and creamy. Add bacon, stir, then season with salt and pepper to taste. Add more broth if soup is too thick, bit by bit.
  4. Serve warm with garlic bread.
